Meet the Chef

Tom Brinkel

My name is Tom Brinkel. I am a German trained chef with a strong connection to New Zealand cuisine. After finishing my 3 year apprenticeship I worked in several different high-end restaurants and hotels throughout Germany, and in Wellington, New Zealand. In the last few years, I have worked in the Intercontinental Hotel, at Parliament, and at Te Papa as the Head Pastry Chef. For me, it is all about investing attention into one thing so you can make that thing look and taste amazing. I am passionate to meet the challenge of perfection in order to create something of beauty. My motto is 'Any cake for any occasion'. My forefathers back in Germany have been master bakers for centuries and it is an honour to continue my family tradition in making the most outstanding cakes here in NZ.

Tom, I was blown away when I came to collect my daughters 21st birthday cake. I find it hard to believe you did not know who Betty Boop was. Lol. This beautiful cake was superbly executed right down to the last detail. Exactly how I envisaged this to be. You understood every detail and added extra features right where they should be. It would appear, there is nothing you cannot do. The cakes were Mud cake and Red Velvet, all three tiers with ganache filling, beautiful flavours and moist. Worth every cent! Tom is absolutely exceptional! With less then 24hrs this man made a cake that saved my sons grad and provided us with a stand that again... saved the day! Tom Brinkel - you're AMAZING! I'm sure that there are not many people who can respond to a call for a wedding-or-birthday cake (depending on what the bride said!) only 5 days before an event. In the end, not only did she say 'yes' to getting married on Saturday morning, the wedding went ahead on Saturday night! A BIG surprise for everyone (including the bride).
