Here at Brinkel’s Cake Art we are committed to crafting a personalised cake for your special occasion. We enjoy sitting down with each couple, hearing your thoughts, and designing something amazing. Meet the Chef

Tom Brinkel

My name is Tom Brinkel. I am a German trained chef with a strong connection to New Zealand cuisine. After finishing my 3 year apprenticeship I worked in several different high-end restaurants and hotels throughout Germany, and in Wellington, New Zealand. In the last few years, I have worked in the Intercontinental Hotel, at Parliament, and at Te Papa as the Head Pastry Chef. For me, it is all about investing attention into one thing so you can make that thing look and taste amazing. I am passionate to meet the challenge of perfection in order to create something of beauty. My motto is 'Any cake for any occasion'. My forefathers back in Germany have been master bakers for centuries and it is an honour to continue my family tradition in making the most outstanding cakes here in NZ.

Tom made the most stunning cake for our daughter's wedding. Four tiers each a different flavour with different cream fillings and buttercream icing over the whole cake. He tastefully mixed in beautiful sugar flowers with the real Jasmine trailing down the cake. Not only did it look wonderful - it tasted absolutely delicious. Highly recommended for his consultative skills as well as his talent and professionalism!read more

No request was too much for Tom when I tasked him with making a cake for my cast of my musical Seacliff: Demise of Ward 5. The cake had to be gluten, dairy and soy free and he was able to cater for all those things, and do an image of my cast in icing on top of the delicious cake too!read more

The cake Tom made for my girls 5th birthday was absolutely beautiful in looks and taste. I was blown away by the wee toy on the top, such a cool idea using something that the girls can continue to play with after the birthday. Both the chocolate and lemon cakes were lovely. I have had some birthday cakes before where the cake itself is so heavy and hard but your one was beautifully light and moist. The fondant was yet again amazing, a beautiful thin layer of it. In the past our cakes have had very thick layers of fondant around them which is okay if it’s something you love but can become a bit too much if its not your thing. The party guests were blown away by your creation as well as how delicious it tasted. I cannot thank you enough for your help, right from your excellent communication through to the end product of the cake – absolutely perfect!!read more

Absolutely superb! Tom cooked three cakes for a work campaign. I had sent through some images and wording for the top of each cake, but on collection of them I was blown away at the extra decorative finishes. They were above and beyond what I had hoped for. Needless to say awarding the cakes was a pleasure and they tasted delicious. Tom was fantastic to deal with and we can't recommend him highly enough!read more
